The course
There is no fixed menu; the omakase changes daily with the season. Dinner opens with tsumami (small dishes served before the sushi), moves on to nigiri, then a seasonal fish kamameshi (rice cooked in an iron pot) with ochazuke, and ends with gyoku (Japanese omelette) and dessert. Dishes often mentioned at the Cheongdam counter include chawanmushi, sweet shrimp with uni, a shrimp tempura temaki, and a purple sweet potato gyoku carried over from the Sushi Kaisei days. The amount of shari (rice) and wasabi can be adjusted, and ingredients you cannot eat can be noted when booking.
The space
The restaurant has two counters. The main counter looks out through a window onto a bamboo garden; the inner counter has a hinoki top under indirect light. Every guest sits at a counter and receives each piece of sushi directly from the chef.
Chefs
Head chef Sang-yun Chun was head chef at Sushi Kaisei and has led this counter since Sushi Sora Cheongdam opened in February 2024. He pays particular attention to tsumami and plating. Chef Yong-seung Choi, who came through Sushi Koji, Sushi Kaisei and Sushi Sora’s Seocho and Daechi branches, works the counter with him, and chef Soon-hoo Lee served his first dinner here in May 2026. The group is led by chef Koji Nakamura, who came to Seoul in 2011 and opened Sushi Koji in Cheongdam-dong in 2014.
